Pie birds are used in the center of fruit pies to vent steam.

Line your pie plate with crust,  put pie bird in the center and add filling (usually fruit).  Cover fruit and pie bird with top crust and make an X in the center of crust to go over pie bird.  Pinch crust around the bird's shoulders, allowing head to stick through pastry.  The bird will release steam through its mouth opening, during baking and help to prevent juices from bubbling over in the oven.
